Detection of Buttermilk Solids in Meat Binders by Electron Microscopy
نویسندگان
چکیده
Nonfat dry milk and buttermilk solids used as ingredients in meat binders can be differentiated by transmission electron microscopy. The meat binders are suspended in water and coarser ingredients such as wheat and mustard flours are separated from the milk solids by low-speed centrifugation (415 g for 30 min). The milk solids thus purified are concentrated by ultracentrifugation (8 x 10 4 g for 90 min) and the resulting pellets are embedded in a resin, thin-sectioned, stained, and examined by transmission electron microscopy. Buttermilk solids are revealed by the presence of fat globule membrane fragments. In the absence of buttermilk solids only casein micelles are found in the pellets. Sensitivity of this technique is 1 part of buttermilk solids in 20 parts of milk solids, i . e . 5% of buttermilk (w/w). Initial paper received November 5, 1981. Revised manuscript received February 17, 1982. For this paper contact M. Kalab, (telephone number 613 995 3700 X275).

Effect of processing on the composition and microstructure of buttermilk and its milk fat globule membranes
The effect of cream pasteurization on the composition and microstructure of buttermilk after pasteurization, evaporation and spray drying was studied. The composition of milk fat globule membrane (MFGM) isolated from buttermilk samples was also characterized. Pasteurization of cream resulted in higher lipid recovery in the buttermilk. Spray-drying of buttermilk had a significant effect on phos...

متن کاملAn Apparatus for a New Microcube Encapsulation of Fluid Milk in Preparation for Transmission Electron Microscopy
A simple apparatus has been developed for a new "microcube" encapsulation of fluid milk samples in their prefixation preparation for electron microscopy. The new technique is based on making cubic wells in an agar gel layer, filling them with fluid milk samples, and sealing them with another agar gel layer . The individual wells are then separated by cutting from the initial block, providing 0....
